The objective of our new project is to revalue the old bakery products
collected at our school level and to implement the concept of circular economy.
The research topic is how to use old bread as a resource. We will run two experiments: -turning old bread into dough; -experimentally checking a local concept that mushrooms grow faster and better if the soil is improved with old bread.
We will promote the entrepreneurial dimension in the circular economy by creating
a business plan for a virtual company having as object of activity the revaluation
of old bread products.
